Easy No Crust Pizza Cups

This is a great idea for a kid-friendly weeknight meal: no crust pizza cups made in your muffin tin!  I made these for a client this week who is on a special diet and needs a healthy protein and low fat, low carb meal.

I started with turkey bacon for the crust.  I used Applegate Farms uncured turkey bacon.  I cut each piece in half and placed them crisscrossed in the muffin tin.

Then in a saute skillet, I sauted my favorite pizza toppings: onions, green peppers and mushrooms in 1 tablespoon of garlic grapeseed oil until they were tender.  I then added 2 tablespoons of tomato paste, 3/4 of a cup of RW Knudsen Low Sodium Organic Very Veggie vegetable juice and 1-2 teaspoons of Wildtree Pizza Sauce Seasoning, or to taste.  Stir to combine and heat until warm and bubbly.
Add about 2 tablespoons of the veggies and sauce combination on top of the bacon slices and then top with cheese.  


You say you don’t like all those yummy veggies? You can easily change it up to have your favorite toppings inside your pizza cup.  How about pineapple and “bacon” or meat lovers with sausage and turkey pepperoni or BBQ chicken using BBQ sauce instead of pizza sauce? The options are as endless as your imagination!!

Place the muffin tin in a preheated 350 F oven for about 15 minutes or until the cheese is melted & slightly browned, the sauce is bubbling a bit and the edges of the bacon are crispy.  Let them sit for 5 minutes for serving.

Serve in a bowl or on a plate on top of a bed of lettuce with homemade ranch dressing, if desired. And dinner is on the table in less than 30 minutes!
